Mexi-Caesar Salad

Serves 4-6

Mexi-Tahini Caesar Dressing

3 tbsp. tahini paste

3 tbsp. lemon juice

2 tbsp. olive oil

1-2 cloves garlic, minced

1 tsp. Dijon mustard

1 tsp. Worcestershire sauce

1/2 tsp. cumin

1/2 tsp. chili powder

1/4 tsp. salt 

Black pepper to taste 

Salad

1 head romaine lettuce, washed, and cut or torn into bite size pieces

½ cup pumpkin seeds

½ cup black beans (optional)

Serve with crumbled Cotija cheese (optional) 

  1. Combine all dressing ingredients in a medium bowl, and whisk to combine. 

  2. Toss lettuce with dressing, and top with all remaining ingredients (or serve with additional ingredients on the side). 

Tips

  • Skip the cumin and chili powder for a more traditional Italian style Caesar dressing.

  • Chopped anchovies or a dash of fish sauce will also make this dressing more traditional and add some more flavor.
