Mexi-Caesar Salad
Serves 4-6
Mexi-Tahini Caesar Dressing
3 tbsp. tahini paste
3 tbsp. lemon juice
2 tbsp. olive oil
1-2 cloves garlic, minced
1 tsp. Dijon mustard
1 tsp. Worcestershire sauce
1/2 tsp. cumin
1/2 tsp. chili powder
1/4 tsp. salt
Black pepper to taste
Salad
1 head romaine lettuce, washed, and cut or torn into bite size pieces
½ cup pumpkin seeds
½ cup black beans (optional)
Serve with crumbled Cotija cheese (optional)
Combine all dressing ingredients in a medium bowl, and whisk to combine.
Toss lettuce with dressing, and top with all remaining ingredients (or serve with additional ingredients on the side).
Tips
Skip the cumin and chili powder for a more traditional Italian style Caesar dressing.
Chopped anchovies or a dash of fish sauce will also make this dressing more traditional and add some more flavor.
