Roasted Garlic and Tomatillo Guacamole

Serves 4-6

Ingredients

3 medium tomatillos, husked, rinsed, and cut into quarters

6-8 cloves garlic

1 tbsp. extra-virgin olive oil

1/2 large white onion, finely chopped

3-4 tbsp. chopped fresh cilantro

2 large avocados, peeled, and pitted

Juice of 1 lime (~2 tbsp. lime juice)

Salt to taste

  1. Preheat oven to broil. Place tomatillos in a small casserole dish, and place garlic in the same dish, but push off to one side. Drizzle with oil, and roast until the tomatillos are blackened and juicy, and the garlic is golden brown, stirring occasionally, about 12-15 minutes.

  2. Meanwhile, combine all other ingredients in a large bowl.

  3. When the tomatillos and garlic are done cooking, mash each clove of garlic with a fork, then mash the entire mixture with a potato masher to thoroughly combine. Let cool slightly, then mix with avocado mixture.
