Mango Sushi Rice Cakes

Makes 4 servings

Ingredients

1 large avocado, pitted and peeled

1 tsp. soy sauce

1/2-1 tsp. wasabi paste

Pinch of salt to taste

4 brown rice cakes

4 snack size sheets of nori, crumbled

1/2 cup chopped mango

1/2 cup chopped cucumber

1 tsp. sesame seeds

  1. In a small bowl, combine the avocado, soy sauce, wasabi, and a pinch of salt to taste. Mash with a fork.

  2. Spread avocado mixture onto rice cakes. Top with crumbled nori, followed by mango, cucumber, and sesame seeds.

Tips

  • You can change this up any way you want! Whatever you like on your sushi roll will work great here, but the avocado mixture is important to get everything to stick to the rice cake.
