GF Socca "Garlic Bread" (Italian Chickpea Flatbread)

Ingredients
1 cup chickpea flour
1 tsp salt, plus more to taste
1 tsp freshly ground black pepper
5 tbsp extra virgin olive oil, divided
1 tbsp butter, at room temperature
2-3 cloves garlic, minced
1/4 cup chopped fresh parsley
1/4 cup shredded parmesan cheese (optional)
Heat oven to 450F, and place an oven safe skillet inside. Stir together chickpea flour and salt in a mixing bowl, and slowly whisk in 1 cup of lukewarm water, whisking constantly to avoid clumps. Stir in 2 tbsp olive oil. Let rest while oven preheats.
Stir together, butter, olive oil, garlic, parsley, and a pinch of salt to taste.
Remove the pan from the oven, and swirl in another 2 tbsp of olive oil to coat. Pour in batter, and place back in oven, and cook for about 10-15 minutes, until the “pancake" is set.
Remove the pan from the oven, and turn the oven to broil. Spread with butter and garlic mixture, and return pan to broiler for another 3-4 minutes, until lightly browned on top.
Tips
Preheat the pan VERY thoroughly before adding the batter. If the pan is not hot enough, the pancake may stick a bit.
Cast iron works best for this, but a stainless steel pan will work as well.
