Zucchini Hummus

Zucchini is one of my favorite summer veggies, mostly because it's just so easy to work with.

No peeling, no big seeds or cores to work around, they require almost no prep work, and cook up super fast.

This is a really fun recipe, because the zucchini gave this hummus an amazingly luscious and creamy texture. I wasn't sure how swapping out chickpeas for raw zucchini would work, but I was absolutely blown away!

The zucchini gives the hummus a nice fresh flavor, yet still tastes shockingly close to classic hummus. Not to mention, it only takes about 10 minutes to make!

Zucchini Hummus

Servings: 4-8

Ingredients

2 cups small diced zucchini

6 tbsp tahini

3 tbsp extra virgin olive oil

1-2 tbsp lemon juice

3/4 tsp cumin

2-3 cloves garlic

salt and pepper to taste

  1. Place all ingredients in a blender, and puree to desired consistency.

Tips

  • This can also be made using an immersion blender, as opposed to a traditional blender.
