Honey Dijon Brussels Sprouts

Servings: 2-4

Ingredients

1/4 cup olive oil

2 tbsp honey

2 tbsp Dijon mustard

3/4 tsp salt

Freshly ground black pepper to taste

1 1/2 lbs. Brussels sprouts, ends trimmed, halved

2/3 cup lightly toasted pecans

  1. Preheat the oven to 450F. Combine the olive oil, honey, mustard, salt, and pepper in a large bowl and stir to combine. Add the brussels sprouts, and toss to coat.

  2. Place on a parchment lined baking sheet, and roast until lightly charred and tender, about 20-30 minutes. Top with pecans.
