2-Ingredient Vegan Banana "Ice Cream"

This ice cream is flat out AMAZING.

I was doing a healthy cooking demo for a private party recently, and brought this "ice cream" along since it was someone's birthday. Nobody could believe this recipe was only 2 ingredients and completely vegan!

It's just so delicious, I literally can't get over it. It's so insanely close to real ice cream, and so much healthier for you. It's literally as close to guilt free ice cream as you can get!

2-Ingredient Vegan Banana "Ice Cream"

Servings: 4-8

Ingredients

6 frozen bananas

1 (14 oz.) can coconut cream

  1. Combine both ingredients in a blender or food processor, and puree until smooth.

  2. Eat immediately for soft-serve like texture, or freeze for 2-3 hours until slightly firm for a more ice-cream like texture.

Tips

  • After making this recipe multiple times now, I can say that it really is best to add a little bit of vanilla extract. Maybe around 1/2 - 3/4 tsp. It rounds out the flavor and gives it a little more of an ice cream like flavor.

  • Don't process for too long, or else the heat from the blender or food processor may start to melt the ice cream.

  • The mixture will become firm if left in the freezer overnight. Leave it on the counter for an hour or so, and it will regain the luscious creamy texture.
