15 Minute Veggie Fried Rice
I hear it all the time..."cooking takes too much time! I don't have time to cook for myself and eat healthy!"
As a Food Coach, it's my job to show people that it doesn't have to be this hard. This Veggie Fried Rice recipe is healthy, nourishing, and delicious, and literally only takes 15 minutes! And when I say 15 minutes, I don't mean 15 minutes once everything is washed, chopped, and neatly organized...
In this live video, I made a Veggie Fried Rice from start to finish in 15 minutes. Nothing was washed or chopped, everything was done live on camera. No tricks up my sleeve on this one!
The point is to show you that with the right recipe and with a little but of experience, cooking doesn't have to take so much time. It might just take a little bit of effort to get over the hump, but once you find some recipes you like and things start to click, healthy delicious meals are on the table much faster than you'd think!

15 Minute Veggie Fried Rice
Servings: 2-4
Ingredients
2 tbsp extra-virgin olive oil
1 cup thinly sliced celery
2 cups sliced green cabbage
1 (8 oz.) package sliced mushrooms
2 large eggs, beaten
1 cup frozen peas, thawed
1 cup cooked brown rice
2 tbsp chili-garlic sauce
1-2 tsp soy sauce
Garnish with thinly sliced green onions (optional)
Salt and pepper to taste
Heat olive oil in a large skillet over medium heat. Add celery and cook until slightly soft, about 3-4 minutes. Add the cabbage and mushrooms and cook for another 4-6 minutes, until all of the veggies are soft and cooked nearly all the way through.
Push all of the cooked vegetables to one side of the pan. Pour the eggs into the cleared half of the pan. Let cook for 2-3 minutes until slightly set, then scramble the eggs and mix with the rest of the vegetables (add a little bit more oil if you’re not using a non-stick skillet).
Add peas, rice, chili garlic sauce, soy sauce, and salt and pepper to taste. Mix well and let the rice cook until slightly crispy and all of the ingredients are cooked all the way through. Garnish with green onion.
Tips
It’s easiest to use day-old rice. Dry rice get’s nice and crispy, and creates the perfect texture for fried rice. Cook it up the night before, and stash it in the fridge until you’re ready to make this recipe.
You can add or subtract whatever veggies you want! You can add broccoli, shredded carrot, spinach, etc. This recipe can easily be adapted to whatever veggies sound good to you.
