Chicken Sausage and Chickpea Skillet

Ingredients

1 tbsp olive oil

½ (14.5 oz) container Trader Joe’s Mirepoix Mix

2 links pre-cooked chicken apple sausage, thinly sliced 

1/2 (14.5 oz.) can chickpeas, drained and rinsed

~2 oz. kale, stemmed and chopped (a couple of handfuls)

1/2 (25 oz.) jar Trader Joe’s Tomato Basil Marinara Sauce 

Salt and pepper to taste 

  1. Heat the olive oil in a large skillet over medium heat (heat the oil for 3-4 minutes). Add the mirepoix mix (only half of the container*), and cook for 3-4 minutes. 

  2. Add the sausage and cook for another 3-4 minutes, stirring occasionally. 

  3. Add the chickpeas, and cook for another 3-4 minutes, stirring occasionally. 

  4. Add the kale and marinara sauce, and bring to a simmer. Cook until the kale is wilted and everything is cooked all the way through, about 6-8 minutes. Season with salt and pepper to taste. 

Tips

  • I’m not sure Neve will be into the “mirepoix” mix (celery, onion, and carrot) but it’s chopped up so small, I have a feeling he’ll barely notice.

  • You can substitute the kale for spinach, or another green if you prefer. You can buy pre-cut kale in bags at Trader Joe’s. 

  • You don’t really need to measure the kale by weight. Just throw in a couple of handfuls, or whatever looks right to you.

  • You can use any marinara, or tomato sauce that looks good to you.
