Chicken Mushroom Spinach Stir Fry

Makes 4 servings

Chicken

3 tbsp. extra-virgin olive oil (or other cooking oil), divided*

1 lb. chicken breast or thighs, cut into bite-size pieces

salt, to taste

pepper, to taste

8 oz. white mushrooms, thinly sliced

2-3 cups spinach (or about 2-3 large handfuls)

Sauce

3 cloves garlic, minced

1 tbsp. minced ginger

2 tsp. sesame oil

⅓ cup reduced sodium soy sauce

2 tsp. brown sugar

1 cup chicken broth

1/4 cup all-purpose flour

Additional Ingredients

Serve over cooked brown rice or with brown rice noodles (optional)

(*divided means that the oil will be divided between different steps, and not used all at once)

  1. In a large pan on medium-high heat, add 1 tablespoon of oil. Once the oil is hot, add chicken, season with salt and pepper, and sauté until cooked through and browned, about 5-7 minutes. Remove cooked chicken from pan and set aside.

  2. In the same pan, heat 1 tablespoon of oil and add mushrooms. Sauté until cooked through and browned, about 5-7 minutes. Remove cooked mushrooms from the pan and set aside.

  3. Add 1 tablespoon of oil to the pan and sauté garlic and ginger until fragrant. Add the remaining sauce ingredients and stir until smooth.

  4. Return the chicken and mushrooms to the saucy pan, along with fresh spinach. Cook, stirring occasionally, for about 5 minutes, or until the spinach has wilted and everything is thoroughly heated.

  5. Serve with hot rice or noodles.

Tips

  • Since Neve is still getting used to mushrooms, I would suggest that you slice them very thinly. If he gets a big piece of mushroom, it might be too much for him. If it’s very thinly sliced, it will likely be much more palatable for him.

  • You can use as much or as little spinach as you’d like. I would recommend starting with one or two handfuls, and see how he likes it. If he wants it to be healthier, then add another handful.

  • I would highly suggest serving with noodles or rice, since this is a very vegetable heavy dish, and I think having a starch on the side will help make it easier for Neve, so he’s not getting any bites that have too many vegetables (unless that’s what he wants!)
