Curtido
Serves 6-8
Ingredients
1/4 head green cabbage, thinly sliced
1-2 medium carrots, grated
1-2 jalapeno peppers, thinly sliced (optional)
1 quart boiling water
3/4 cup cider vinegar
1/4 cup water
2 tsp. salt
1 tsp. dried oregano
Place the cabbage and carrots in a large bowl. Add boiling water, and let sit for 5 minutes.
Drain water, and mix cabbage with vinegar, additional water, salt, and oregano. Let sit for at least 30 minutes before serving.
Tips
This recipe can be made days ahead, and can be stored in the fridge for 3-5 days (at least).
