Braised Black Beans

Serves 4-6

Ingredients

1 tbsp. olive oil

1 small yellow onion, chopped

2-3 cloves garlic, minced

2 (15 oz.) cans black beans, drained and rinsed

1 tsp. paprika

1/2 tsp. dried oregano

1/2 tsp. ground cumin

Salt and pepper to taste

  1. Heat oil in a medium pot over medium heat. Add onion, and saute for 5 minutes. Add garlic and saute for another 2-3 minutes, until fragrant.

  2. Add 1 cup of water, beans, paprika, oregano, and salt and pepper to taste. Bring to a simmer and reduce heat to low. Cover, and gently simmer for 30 minutes.
