Salsa Roja
Serves 6-8
Ingredients
1(15 oz.) can fire-roasted diced tomatoes
1-2 cloves garlic
½ cup roughly chopped white onion (about ½ small onion - in this case we’ll use red onion)
¼ cup lightly packed fresh cilantro leaves
1-2 tbsp. lime juice
½ tsp. sea salt
1 chipotle pepper and/or 1-2 tsp. of adobo sauce (optional)
Place all ingredients in a blender, and blend to desired consistency.
Tips
Use an immersion blender or Magic Bullet blender for faster cleanup.
