Mediterranean Hummus Bowls
Serves 4
Ingredients
2 cups prepared hummus
2 cups cooked brown rice or quinoa
4 cups fresh arugula, spinach, or other salad green
1/2 pint cherry tomatoes, halved
1 English cucumber, diced
1 (14.5 oz) can chickpeas, drained and rinsed
1 cup good quality pitted olives
Extra virgin olive oil for serving (optional)
Place all ingredients in serving bowls and drizzle with additional olive oil if desired.
Tips
A splash of hot sauce will be nice with this, as well as a squeeze of fresh lemon juice.
Feel free to adjust the amounts of everything to suit your tastes.
Cherry tomatoes can be substituted with any other type of tomato, but choose something high quality and fresh for the best eating experience.
