15 Minute Mushroom Avocado Tacos
Serves 2
Ingredients
2 tbsp. extra-virgin olive oil
1/2 large white onion, chopped
8 oz. mushrooms, sliced
1 tsp. soy sauce
1 tsp. chili powder
1 tsp. paprika
Salt to taste
6 corn tortillas, warmed
1 small tomato, chopped
1/4 cup roasted unsalted pumpkin seeds
1/4 cup chopped fresh cilantro
Heat oil in a large skillet over medium heat. Add onion and cook for 3-4 minutes, until slightly softened. Add mushrooms, and cook for another 2-3 minutes.
Add soy sauce, chili powder, paprika, and salt to taste, and saute for another few minutes until the mushrooms and onions are fully cooked.
Place mushroom and onion mixture on a tortilla, and top with tomato, pumpkin seeds, and rrsh cilantro. Serve with favorite salsa or hot sauce.
Tips
Black beans would make an excellent addition to this taco.
