Peanut Butter Chia Oatmeal

Ingredients
1/2 cup old-fashioned rolled oats
2 tsp. chia seeds
2 tsp. ground flaxseed
3/4 cup non-dairy milk
2 tbsp. peanut butter
1/2 cup roasted nuts (peanuts, almonds, slivered almonds, etc.)
1/2 cup chopped fruit (strawberries, banana, apples, etc.)
Place the oats, chia seeds, and non-dairy milk in a medium bowl, and microwave for about 1.5-2 minutes, until milk is absorbed, and oatmeal is at desired texture.
Top with peanut butter and nuts, and fold to gently combine.
Top with fresh fruit
Tips
This recipe is only made for one serving, but if you want to make a bigger batch, you can make the oatmeal on the stovetop or microwave a larger batch
This recipe is actually what I eat every morning for breakfast! I generally use oat milk, and top it with roasted salted peanuts, and whatever fruit is in season. During the summer months, it’s strawberries and/or blueberries, in the fall it’s chopped apples, and in the winter it’s either bananas or pomegranate arils
You can also use steel-cut oats in place of rolled, but you’ll either want to cook them on the stovetop, or you can microwave them in a big bowl with lots of additional liquid for about 4-5 minutes.
