Mediterranean Hominy Salad

If you’re not familiar with hominy, It’s dried corn kernels that undergo a process called “nixtamalization” that softens the corn and loosens up the hulls, creating these big soft and chewy corn kernels that are just delicious! It’s essentially the starting ingredient that’s use to make masa and grits. 

I know what you’re thinking though…corn = GMO, right? I get this question all the time from my clients, asking if they should be steering clear of corn. However, I partnered with Natural Value for this recipe, because they make an organic hominy that is absolutely amazing!

For starters, not everybody knows this, but anything that is organic is also non-GMO, so therefore this organic hominy is also non-GMO. Interestingly, Organic hominy is extremely rare. In fact, I’ve never seen it before, and after a quick Google search, it looks like Natural Value might actually be the only brand out there making it! I mentioned Natural Value in my Chicken Olive Kabob recipe, and I don’t think I could have partnered up with a better company for either recipe. Everything they make is amazing, clean, and often organic, so it’s a brand I can trust. Not only that, but their products are available at a really affordable price point compared to other quality options, so it’s a brand that’s definitely a staple in my pantry.

While hominy is traditionally used more in Mexican cuisine, I had a ton of fun incorporating them into a simple Mediterranean style salad. Mediterranean Hominy Salad

Servings: 4-6

Ingredients

Dressing

1/4 cup olive oil

2 tbsp cider vinegar

2 tsp dijon mustard

2 tsp fresh lemon juice

1-2 tsp Natural Value Organic Sriracha (optional) 

1/2 tsp salt

Freshly ground black pepper to taste 

Salad

1 (30 oz.) can Natural Value Organic Hominy, drained and rinsed

2/3 cup chopped red onion 

1 1/2 - 2 cups halved cherry tomatoes

1 1/2 cups loosely packed mint, roughly chopped 

1/2 cup crumbled Feta 

  1. Place all dressing ingredients in a small bowl or jar, and whisk or shake to combine. Set aside.

  2. Place the hominy, chopped onion, and halved cherry tomatoes in a large bowl. Add the dressing, and toss to combine. Gently fold in the chopped mint, and top with Feta cheese.
