Chocolate Covered Strawberries with Smoked Sea Salt
Servings: 2-4
Ingredients
4-6 oz. good quality chocolate
1/2 lb. strawberries
Smoked sea salt for topping
Gently melt the chocolate in a heat proof bowl over a double boiler, or in the microwave for 30 second increments, until the desired texture is reached.
Dip the strawberries one at a time into the chocolate. Place on a wax lined baking sheet, then gently pull the strawberries back to avoid a large puddle of chocolate at the bottom of each strawberry. Top with smoked sea salt flakes to taste, and repeat with remaining strawberries.
Place in the refrigerator to let set, for 30 minutes up to a day or two.
Tips
Make sure to avoid getting any water in the chocolate. This is both relevant when you're melting your chocolate (avoid getting steam in your chocolate), and while dipping your strawberries (make sure your strawberries are very dry before dipping)
You can top them with whatever you want after dipping, but the smoked sea salt is a simple way to add a little bit of style and grace to this dessert
You can use a toothpick to dip your strawberries into the chocolate, and then stick them in a block of styrofoam to avoid any flat chocolate spots on the bottom
