Banana Oatmeal Chocolate Chip Cookies

Makes 16 cookies

Ingredients

1 cup mashed ripe banana (~3 bananas)

1/2 cup natural salted peanut butter (or any nut or seed butter)

2 cups rolled oats

1/4-1/2 cup chocolate chips

  1. Preheat oven to 350 F. In a large bowl add bananas and peanut butter. Stir until evenly mixed.

  2. Add in oats. Stir until evenly combined.

  3. Add in chocolate chips. Stir until evenly combined.

  4. Lightly wet your hands, and form 16 even sized balls of dough, and place onto a parchment lined baking sheet, spacing them about 2 inches apart. Use the palm of your hand to press down and flatten cookie. Cookies will not spread during baking so shape the cookie batter to your desired cookie shape.

  5. Bake cookies for about 10 minutes or until set. Let cookies cool completely before removing from baking sheets.
