Indian Chicken Curry

Servings: 2-4

Ingredients

1 (15 oz.) jar Trader Joe’s Masala Simmer Sauce 

1 cup chicken broth 

1 lb. chicken thighs 

1 (14.5 oz.) package Trader Joe’s Mirepoix Mix

5 oz. chopped Tuscan Kale or spinach (a few good handfuls of greens)

1 (14.5 oz.) can chickpeas, drained and rinsed 

Salt and pepper to taste


  1. Place simmer sauce and chicken broth in a large pot. Bring to a simmer over medium high heat. 

  2. Add the chicken, mirepoix mix, and some salt and pepper, and bring the mixture back to a simmer (once you add the ingredients, it will probably stop simmering, but should quickly get back to a simmer). Reduce the heat to low, cover the pot, and cook for 20-40 minutes, until the chicken is very tender. 

  3. Add the chickpeas and kale, and cook for another 5 minutes. Remove from heat, and serve. 

Tips

  • This would be a good dish to serve over brown rice. You can make rice yourself, or you can even buy frozen brown rice at Trader Joe’s 

  • Mirepoix is a combination of chopped celery, onion, and carrots. 

  • This dish can also be made in a slow cooker.
