Pepperoni Veggie Pizza

Makes 2 small pizzas

Ingredients

1 tbsp. extra-virgin olive oil

1 medium green or red bell pepper, cored, and thinly sliced

1 cup thinly sliced mushrooms

2 pieces naan bread (or 1 large prepared pizza crust)

1/2-1 cup prepared pizza sauce (as much as you’d like)

8 oz. fresh Mozzarella cheese, torn into small pieces

2-3 oz. pepperoni slices

Salt and pepper to taste 

  1. Preheat oven to 425F. Heat a small skillet over medium heat. Add the sliced bell pepper to the pan, and lightly cook for 2-3 minutes. Add the mushrooms, and cook until the veggies are cooked through, about 4-5 more minutes.  

  2. Place naan on a baking sheet, and cover with pizza sauce, followed by small pieces of Mozzarella cheese. Top with cooked bell peppers and mushrooms, and pepperoni slices.

  3. Bake for 12-15 minutes, until the cheese is lightly browned.

Tips

  • I’m a big fan of using naan bread as a pizza crust, but you can you whatever type of pizza crust you prefer. I find that 1 piece of Naan bread is usually good for two people

  • This recipe uses fresh Mozzarella cheese because I think it’s more delicious than standard shredded Mozzarella, but you may use whatever type of cheese you prefer.

  • Use this recipe as a guideline. If you want more or less veggies or pepperoni, feel free to adjust the amounts of everything.
