Mexican Beans
Serves 2-4
Ingredients
1/2 (15.5 oz) can petite diced tomatoes
1 tbsp. extra virgin olive oil
1/2 tsp. garlic powder
1/4 tsp. ground cumin
1/4 tsp. paprika
1/8 tsp. ground cinnamon
1 (15.5 oz) can pinto beans, drained and rinsed
Salt and black pepper to taste
Bring tomatoes, olive oil, and all seasonings to a simmer in a medium saucepan. Add beans, cover, and gently simmer on low for 10 minutes.
Remove the lid and continue to simmer, stirring occasionally, until the mixture has thickened slightly, about another 10 minutes.
