Mango Avocado Salad

Serves 4

Ingredients

2 tbsp. extra-virgin olive oil 

2 tbsp. lime juice

salt and pepper to taste 

2 mangos, peeled, pitted, and diced

1 large avocado, peeled and diced

1/4 cup chopped red onion

2-4 tbsp. chopped fresh cilantro 

  1. Stir together olive oil and lime juice. Add salt to taste. 

  2. Place all remaining ingredients in a large serving bowl, drizzle with dressing and gently toss to coat.
