Guasacaca (aka Venezuelan Guacamole)

Serves 4-6

Ingredients

2 large avocados, peeled and pitted 

1 jalapeno 

1 medium white onion, diced

2 cloves garlic

1 bunch parsley

1 bunch fresh cilantro

1/4 cup red wine vinegar

1 tsp salt, or to taste

black pepper to taste

1/3 cup olive oil 

  1. Place all ingredients except for olive oil in a blender or food processor and pulse to combine.

  2. With the blender on, slowly pour in olive oil and puree to desired consistency.
