Mediterranean Pasta Salad

Serves 4 to 8 

Salad

2 cups bowtie pasta

1 cup halved cherry tomatoes 

1/2 medium red onion, quartered and thinly sliced

2/3 cup walnuts, lightly toasted and crumbled

1/2 cup crumbled Feta cheese

1/2 cup sliced or roughly chopped olives 

Dressing

3 tablespoon red wine vinegar  

2-3 tsp honey

2 teaspoons Dijon mustard 

1/4 cup olive oil 

Salt and pepper to taste 

  1. Cook the pasta according to the package directions, then drain, rinse under cold water and refrigerate until chilled. 

  2. Mix up all dressing ingredients.

  3. In a large bowl, toss together the dressing with the chilled pasta, cherry tomatoes, sliced onion, walnuts, Feta cheese, and olives.

Tips

  • The better quality the olives, the better the salad will be.
