Cauliflower Tikka Masala

Serves 4-6

Ingredients

2 tbsp. extra-virgin olive oil

1 medium white onion, chopped

3-5 cloves garlic, minced

1 tbsp. garam masala

1 tbsp. curry powder

2 tsp. ground coriander

2 tsp. ground cumin

2 tsp. chili powder

1 (28 oz.) can crushed tomatoes

2 tbsp. tomato paste

1 (15 oz.) can coconut cream (or 1 cup heavy cream*)

Salt and pepper to taste

1 large head cauliflower, cut into bite size pieces

1 tbsp. chopped fresh cilantro for garnish

  1. Heat oil in a large soup pot over medium heat. Add onion, and saute until soft, about 5 minutes. Add garlic and cook for another 2-3 minutes, until fragrant.

  2. Add garam masala, curry powder, coriander, cumin, and chili powder, and saute for another 2 minutes. Add the tomatoes, tomato paste, and coconut milk, and bring to a simmer.

  3. Add cauliflower, reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until cauliflower is tender, but not mushy. Garnish with fresh cilantro.
