Chilled Sesame Noodles

Serves 2-4

Ingredients

8 oz. noodles* 

2 tbsp. sesame oil

2 tbsp. natural peanut butter

1 tbsp. soy sauce

1 tbsp. rice vinegar

1 tsp. chili garlic sauce

1/4-1/2 cup shredded carrots

1/4 cup chopped roasted unsalted peanuts

1/2 cup frozen shelled edamame, thawed

1/4 cup roughly chopped fresh cilantro or thinly sliced green onion

  1. In a large bowl, combine sesame oil, peanut butter, soy sauce, vinegar, and chili garlic sauce and stir to combine. Set aside.

  2. Cook noodles according to package directions, and strain under cold water to bring down to room temperature.

  3. Place noodles in bowl and toss to coat. Top with all remaining ingredients. Serve chilled or at room temperature.

Tips

  • If cooking for more than 2 people, use double the amount of noodles. This will make a small batch.
