Chicken Sausage Chickpea Skillet

Serves 4

Ingredients

1 tbsp extra-virgin olive oil

3-4 links pre-cooked chicken apple sausage, thinly sliced 

1 can chickpeas, drained and rinsed

~4-6 oz. kale, stemmed and chopped (a few of handfuls)

1 (25 oz.) jar marinara or tomato sauce 

Salt and pepper to taste 

  1. Heat the olive oil in a large skillet over medium heat. Add the sausage and cook for 3-4 minutes, stirring occasionally, until lightly browned.

  2. Add the chickpeas, and cook for another 3-4 minutes, stirring occasionally. 

  3. Add the kale and marinara sauce, and bring to a simmer. Cook until the kale is wilted and everything is cooked all the way through, about 6-8 minutes. Season with salt and pepper to taste. 

Tips

  • You can substitute the kale for spinach, or any other green.

  • You don’t really need to measure the kale by weight. Just throw in a couple of handfuls, or whatever looks right to you. It will shrink down as it cooks, so I would recommend using a little more than you think you’ll need.

  • Any marinara or tomato sauce that looks good to you will work great for this recipe.
