Chicken Sausage Chickpea Skillet
Serves 4
Ingredients
1 tbsp extra-virgin olive oil
3-4 links pre-cooked chicken apple sausage, thinly sliced
1 can chickpeas, drained and rinsed
~4-6 oz. kale, stemmed and chopped (a few of handfuls)
1 (25 oz.) jar marinara or tomato sauce
Salt and pepper to taste
Heat the olive oil in a large skillet over medium heat. Add the sausage and cook for 3-4 minutes, stirring occasionally, until lightly browned.
Add the chickpeas, and cook for another 3-4 minutes, stirring occasionally.
Add the kale and marinara sauce, and bring to a simmer. Cook until the kale is wilted and everything is cooked all the way through, about 6-8 minutes. Season with salt and pepper to taste.
Tips
You can substitute the kale for spinach, or any other green.
You don’t really need to measure the kale by weight. Just throw in a couple of handfuls, or whatever looks right to you. It will shrink down as it cooks, so I would recommend using a little more than you think you’ll need.
Any marinara or tomato sauce that looks good to you will work great for this recipe.
