Vegan Elote
Serves 4-6
Ingredients
4-6 ears of corn, husked, rinsed, and patted dry
2 tsp. extra virgin olive oil
1/4 cup prepared cashew crema*
1/2 tsp. chili powder
1/4 tsp. salt, or to taste
2 oz. finely grated Cotija cheese (optional)
2 tbsp. microgreens or finely chopped cilantro
Serve with lime wedges (~1 lime)
Preheat oven to broil. Place corn on a foil lined baking sheet, and brush with oil. Broil for about 5-7 minutes, flip and broil 5-7 more minutes more, until lightly charred.
Spread crema on one side of the corn, and top with chili powder, cheese, and cilantro. Squeeze with fresh lime juice as desired.
