Mediterranean Quinoa Salad

Serves 4-8

Dressing 

1/4 cup olive oil

2 tbsp. red wine vinegar 

2 tsp. Dijon mustard

1 tsp. honey 

1/2 tsp salt

Freshly ground black pepper to taste

Salad

2 cups cooked quinoa

1/3 cup roughly chopped olives 

1/3 cup chopped red onion

1/4 cup roughly chopped artichoke hearts

1/4 cup crumbled Feta cheese (optional)

  1. In a large bowl, whisk together all dressing ingredients. Add cooked quinoa, and toss to coat.

  2. Add all remaining ingredients, and toss to coat again before serving.

Tips

  • Quinoa can be substituted for another grain like millet or brown rice.

  • Salad can be prepared up to 24 hours in advance.
