Mediterranean Quinoa Salad
Serves 4-8
Dressing
1/4 cup olive oil
2 tbsp. red wine vinegar
2 tsp. Dijon mustard
1 tsp. honey
1/2 tsp salt
Freshly ground black pepper to taste
Salad
2 cups cooked quinoa
1/3 cup roughly chopped olives
1/3 cup chopped red onion
1/4 cup roughly chopped artichoke hearts
1/4 cup crumbled Feta cheese (optional)
In a large bowl, whisk together all dressing ingredients. Add cooked quinoa, and toss to coat.
Add all remaining ingredients, and toss to coat again before serving.
Tips
Quinoa can be substituted for another grain like millet or brown rice.
Salad can be prepared up to 24 hours in advance.
