Indian Naan Pizza

Serves 4

Ingredients

2 tbsp. extra-virgin olive-oil

1 small red onion

3 cloves garlic, minced

2 tsp. garam masala

2 tsp. ground coriander

1 tsp. curry powder

Salt and pepper to taste

1 (8 oz.) can tomato sauce

1-2 tbsp. cream or half and half (optional) 

~4 oz. fresh Mozzarella cheese 

2 naan flatbreads 

1/3 cup frozen peas, thawed

1/4 cup fresh chopped cilantro or micro-cilantro 

  1. Preheat oven to 425°F. Cut the red onion in half. Chop one half of the onion and thinly slice the other half. Set aside. 

  2. Heat oil in a medium saucepan over medium heat. Add chopped onion, and cook, stirring occasionally, until slightly soft, about 4-5 minutes. Add garlic, garam masala, curry powder, ground coriander, and a pinch of salt. Stir and cook until very fragrant, about 2-3 minutes. 

  3. Add tomato sauce, stir, and bring to a gentle simmer. Reduce heat to low, add cream (if using), and let simmer, uncovered, for 4-5 minutes. Let cool slightly. 

  4. Spread equal parts tomato sauce over the naan, and top with small balls of fresh Mozzarella cheese. Add sliced red onion and peas. Bake for 15-20 minutes, until the cheese is lightly browned and bubbly. 

  5. Remove from oven, let cool slightly, and top with fresh cilantro.
