Thai Veggie Green Curry

Serves 4
Ingredients
1 (12 oz.) jar Trader Joe’s Thai Green Curry Simmer Sauce
1 can coconut milk
1 package trader Joe’s Melange a Trois frozen bell pepper mix
1 cup green lentils
5 oz. chopped Tuscan Kale (about half a bag of fresh kale)
Pour simmer sauce and coconut milk into a large saucepan, and bring to a simmer. Add all remaining ingredients, return to a simmer, and cook for 10-20 minutes, or to desired level of doneness.
Tips
This recipe is constructed with Trader Joe’s products, but many of these ingredients can be found at other grocery stores using alternative brands.
You can also substitute kale with spinach
Additional ingredients you could add - sliced celery, sliced leeks, sliced mushrooms, broccoli, peas, cauliflower, etc.
