Cauliflower Crust Pizza

Prep Time: 5 minutes Cook Time: 25 minutes

Serves 2

Ingredients

1 Trader Joe’s cauliflower pizza crust

½ can tomato sauce of choice

1 large avocado, peeled and sliced

½ cup micro-greens 

¼ cup pumpkin seeds 

  1. Preheat oven to 450°F. Place frozen cauliflower crust on a baking sheet, and cook for about 20 minutes. 

  2. Add tomato sauce, and cook for another 5 minutes.

  3. Add sliced avocado, and top with micro-greens and pumpkin seeds 

Tips:

  • This recipe calls for a Trader Joe’s cauliflower pizza crust, but any prepared frozen cauliflower crust will do. You can also make your own cauliflower crust, but I would not recommend it, simply because homemade cauliflower crust is a very time consuming and labor intensive process.

  • Feel free to ditch these ingredients, and top with whatever pizza ingredients you want. My advice is to go light on the cheese (if using) and add lots of veggies.

  • This is a recipe was made specifically for a client who wanted to go vegan, so we used avocado in place of cheese, and made this a very simple, quick recipe to fit her schedule. However, you can add cheese, and change this recipe in any way that you see fit. The cauliflower crust from Trader Joe’s is a very clean product, and will be a time saver no matter what you decide to top your pizza with.

  • Micro-greens can be found at many, if not most major grocery stores at this point, including Trader Joe's.
