2 limes (or lime juice)
1 mango
2 avocados
1 red onion
fresh cilantro
3 small tomatillos
garlic
1 large poblano peppers
ground paprika
1 (15 oz.) can black beans, rinsed and drained
4 (8-inch) whole wheat tortillas
shredded Monterey Jack or Mexican blend cheese
*no prep is required for the class, but if you aren’t very experienced in the kitchen and would like to be more prepared for the class, you may do the following prep before the class starts
slice 1/2 of the red onion and chop up 2 tbsp. of the other half
slice poblano pepper
open can of black beans
peel and chop mango
chop 2 tbsp. of fresh cilantro
