Curtido (Salvadoran Slaw)

Serves 6-8

Ingredients

1/4 head green cabbage, thinly sliced

1-2 medium carrots, grated

1-2 jalapeno peppers, thinly sliced (optional)

1 quart boiling water

3/4 cup cider vinegar

1/4 cup water

2 tsp. salt

1 tsp. dried oregano

  1. Place the cabbage and carrots in a large bowl. Add boiling water, and let sit for 5 minutes.

  2. Drain water, and mix cabbage with vinegar, additional water, salt, and oregano. Let sit for at least 30 minutes before serving.

Tips

  • This recipe can be made days ahead, and can be stored in the fridge for 3-5 days (at least).
